Discovering the Delight of Galette Charentaise: A French Culinary Gem

Updated: Oct 16

A Sweet Introduction to Galette Charentaise

The most popular dish in France to make with candied Angelica is undoubtedly the Galette Charentaise. This delightful cake is not only easy to prepare but also a true representation of French culinary tradition. Despite its name, it’s more of a cake than a galette, and I can't wait to share this recipe with you!

What is a Galette Charentaise?

So, what exactly is a Galette Charentaise? It's a unique creation that combines the characteristics of both a cake and a biscuit. Traditionally, this treat is round, measuring about 25 centimeters in diameter. The recipe is simple, yet it holds a special place in the hearts of locals. You can find the Galette Charentaise primarily along the beautiful west coast of France, where it is cherished and celebrated.

Here’s a recipe taught to me by the talented Elise Botiveau for making your very own Galette Charentaise.

Ingredients

  • 300g plain flour

  • 220g castor sugar

  • 120g unsalted, softened butter

  • 2 eggs

  • 7g baking powder

  • 50g candied Angelica, chopped

  • A pinch of salt

  • 1 cup of milk

Method

  1. Preheat your oven to 230 degrees Celsius (fan forced). It’s a high temperature, but don’t worry; we’ll only be cooking for a short time.

  2. In a mixing bowl, combine the flour, sugar, and baking powder. Whisk them together until well mixed.

  3. Add the softened butter, salt, and eggs to the dry ingredients. Mix everything by hand with a wooden spoon until it forms a dough-like consistency.

  4. Incorporate the chopped candied Angelica into the dough, ensuring it’s evenly distributed.

  5. Grease a pie mold or cake tin that’s about 24 centimeters in size.

  6. Spread the dough evenly into the prepared dish.

  7. Brush the top with milk for a beautiful finish.

  8. Decorate the surface by making crosses with a fork for that traditional touch.

  9. Bake for 10 minutes. Once it’s done, unmold it immediately to prevent sticking.

10. Allow it to cool, then cut into triangles for serving.

The Joy of Baking

Baking this Galette Charentaise is not just about following a recipe; it’s an experience filled with joy and anticipation. The aroma of the cake baking in the oven will fill your kitchen, making it feel warm and inviting. As you slice into the cake, the texture will be a delightful surprise—crispy on the outside and soft on the inside.

Pairing Suggestions

To elevate your Galette Charentaise experience, consider pairing it with a cup of tea or coffee. The sweetness of the cake complements the bitterness of coffee beautifully. Alternatively, you could enjoy it with a dollop of crème fraîche or a scoop of vanilla ice cream for a decadent treat.
