I like to make a goats cheese salad to highlight the creamy, tangy flavor of the cheese while offering a delightful mix of textures and tastes. Use fresh greens like arugula or spinach as a vibrant base, and add seasonal vegetables such as cherry tomatoes, cucumbers, or roasted beets for color and nutrition. You can enhance the salad with nuts like toasted walnuts or pecans for crunch, and include fruits like sliced pears or berries for a refreshing sweetness that balances the savory elements.
For the dressing, herbs de Provence paired with high-quality extra virgin olive oil adds a fragrant Mediterranean touch. A splash of balsamic vinegar or fresh lemon juice brightens the flavors, creating a harmonious blend with the creamy cheese and crisp greens.
Present the salad on a large platter, crumbling the goats cheese on top and arranging the vegetables and fruits attractively. Drizzle with the olive oil dressing just before serving. Herbs De Provence Goats Cheese Salad
Ingredients
1 tbsp of herbs de Provence
3 tbsps of olive oil
1 tbsp of white wine vinegar
1/2 red onion thinly sliced
100g cherry tomatoes
120g goats cheese
1 thinly sliced shallot
Rocket or salad leaves
Method
In a small jar combine the herbs de Provence, olive oil and vinegar and mix until well combined
Place the salad leaves on a plate and tear apart the cheese over the top as well as the onion and tomatoes
Sprinkle the shallot over the top
Then pour the vinegarette over the top and serve
